The problem was that despite his willingness to take it easy, things soon got stifling. He wanted to go out and enjoy himself, but he was pretty much a prisoner. That meant that he was stuck inside, doing nothing, save trying to teach his son the Art.
Unfortunately, not even that was safe from Nodoka's protectiveness. She wanted him safe and that meant a lot of Genma's ideas for training techniques automatically got shot down. She wanted for Ranma to be manly, and he couldn't do that if he got killed in an accident. There had already been one Ranma lost, and she didn't want to see another get slain. However, she did want him to have lots of opportunities with girls, and could just see him with plenty of young ladies being charmed by the way he acted.
On the other hand, Genma saw his son becoming soft, and realised that it was exactly what he'd feared. He knew that if he didn't do something, his boy would not be the powerful martial artist that he so wanted to be able to show off. The woman would turn him into a soft person, instead of a hard warrior, and that could not be allowed.
So, when the chance presented itself, he took the boy, and escaped the 'gilded cage' that he'd been living in. He set out on the open road, certain that any silly obstacle would be no match for his skill, and he would have no worries in that direction. Travelling to make one's self stronger was important after all, and was the way it should be. There was no reason not to do it by his reckoning.
And so, he took his son travelling, with women willing to do anything from being co-wives to kidnapping any healthy male around, soon coming up to his first obstacle, which turned out to be:
