Mihoshi had free associated "ryu" with "ryuu" or "dragon" with "martial arts" - hence substituting Ranma's girl curse with a dragon curse.
Unfortunately she'd gotten terribly enthusiastic and had switched EVERYONE'S Jusenkyo curse for "dragon".
Ranma - Bronze Dragon Hatchling
Ryoga - Blue Dragon Hatchling
Genma - Red Dragon, SD version, Juvenile
Which was why Shampoo was now at a high altitude, circling around, and preparing to show her airen that she no longer turned into something he was scared witless by.
Though some people might have trouble associating a name like Shampoo with a hatchling:
