She'd subjected herself to the indignity of an airplane trip to make a more convincing back story for her for the moment. Ranma would simply not trust her if she walked up to him and said "I'm Saffron reborn, want to make mad, passionate, fiery love?" No, she had to be careful, and that meant hiding as a mortal for some time.
She especially couldn't let the amazons or that Happosai creature know what she was in truth. Not yet at least, not until after she'd already gotten Ranma's trust and told him the truth. Until then, she was not Saffron, she was merely Yeh Lo.
As for who Yeh Lo would be...
